A Distillery Founded by Friends

Copperwing Distillery began with 3 friends whose professional backgrounds spanned engineering, medicine and law. In 2014, former neighbors Chris and Brian were discussing cocktails one evening when they recognized an opportunity to create their own micro-distillery. Chris later invited Kyle, a former colleague and home brew hobbyist, to become part of the project, establishing Copperwing Distillery.

After research and investment, the group located a warehouse in St. Louis Park. They pursued the necessary licenses, designed and constructed stills, and developed spirit recipes.

The initial plan centered on producing spirits for distribution. Soon, however, the vision expanded to include a cocktail room—something new to St. Louis Park at the time. The founders collaborated with the St. Louis Park mayor and city council to secure zoning and licensing approval, then began construction and purchased industrial stills. Copperwing opened to the public in March of 2017. Kyle became Copperwing’s sole owner in 2022 and continues creating innovative spirits.

Distillery & Cocktail Room

Copperwing Distillery sits in St. Louis Park’s unofficial “Distillery District” and produces artisanal spirits such as gin, vodka, fresas, bourbon, and its signature creation, vodskey®. Made from Copperwing’s bourbon mash and distilled like vodka, Vodskey® is a clear, strong spirit with more flavor and character than traditional vodka.

The forty-person cocktail room provides an intimate place to enjoy a craft cocktail. Copperwing’s mixologists shake, stir, build, strain, smoke, froth, spray and garnish each drink in pursuit of its intended flavor profile. Guests who are unsure what to order can receive help choosing something suited to their tastes.

The Spirits

• Vodskey — Copperwing’s signature spirit is clear and offers more flavor and character than vodka. It preserves the fresh grain sweetness and bourbon-mash flavors from which it is distilled. 80 proof.
• Gin — Precision crafted from a selected combination of botanicals, this gin has an intense citrus profile alongside sweet floral notes and subtle juniper. 94 proof.
• Vodka — A clean, crisp neutral vodka distilled primarily from corn. Activated charcoal gives it a silky-smooth finish, and it is never chill-filtered. 80 proof.
• Bourbon Whiskey — This small batch, blended straight bourbon aged for over 3.5 years in new American white oak barrels. Its high-rye mash bill contributes a subtly spicy character. 90 proof.
• Fresas — Copperwing’s original Gin combined with real strawberries and a touch of sweetness. It can be served over ice, in a favorite cocktail or with tonic. 70 proof.
• Fernet Ramé — A bitter-sweet Amaro-style herbal liqueur flavored with spearmint, anise, orange, sage, chamomile and 11 more botanicals. 80 proof.

Cocktails to Go

Copperwing House Calls is Copperwing’s ready-to-drink cocktail line. Its offerings include an Old Fashioned, a Barreled Negroni and The Wilderness Downtown, made with Copperwing’s Straight Blended Bourbon, Fernet Ramé and real maple syrup.

Bottles may be ordered online for pickup at the distillery Mon – Fri, 10 am – 5 pm.

Tours

By-appointment tours of Copperwing’s production facility are offered Wednesdays through Fridays, beginning at 5 pm. Reservations can be made through info@copperwingdistillery. Each tour provides an in-depth look at distillation, a spirit tasting and a take-home sipping glass.

Live Music

Select evenings throughout the year feature live local music. Visitors may drop in at any time, and there is never a cover charge.

Event Space
